The strawberries are ready for pickin’ and our rhubarb has been harvested a few times since the beginning of May. I don’t know about you, but I LOVE this time of year more than anything. The bountiful harvest of asparagus, spring onions, snap peas, strawberries, and rhubarb have me going crazy as I concoct recipes for fresh eating and for stocking up.
This year was the first that I harvested some of our own rhubarb. It is still fairly small so I added to it from what I purchased from local farmers. I made plenty of rhubarb crunch and was craving a simple rhubarb sauce. I pinned a few for inspiration but needed more depth of flavor. Enter in…….
It has that perfect balance of tart and sweet. It is so tasty over homemade vanilla ice cream or a simple bowl of plain yogurt. Make it a dessert, breakfast, or both, just make it! One of the jars I added a drop of my Young Living orange oil to give it yet another layer of goodness. I love having my oils on hand for cooking, especially when I do not have an orange or a lemon handy. You can always substitute orange zest to your recipe or you can ask me how to get Young Living Oils for your own personal use. So let’s get to it before rhubarb season is over.
Honey Vanilla Strawberry Rhubarb Sauce (makes 3 half pints)
5 stalks (about two cups) of rhubarb chopped and greens removed
1 to 2 cup of strawberries pureed
½ cup raw honey (more or less depending on how sweet you like it)
1 vanilla bean cut and seeds scraped out ( you can use 1 tsp vanilla extract too. I used both because I make my own vanilla and I have the beans soaking in the extract)
Zest of one orange or 3 drops of Young Living Orange oil
Place all ingredients in a large pot and simmer on medium low until the rhubarb softens and the sauce thickens. Stir occasionally. This takes about 30 – 40 minutes. Let cool and remove the vanilla bean. Jar it. At this point I added one drop of YL orange oil to each jar. You can also add your orange zest to the ingredients as it simmers.
