I was enjoying this winter up to today when we got hammered with a major snow storm. In fact I had high hopes of cruising through the winter without any snow.
Yes, I am a dreamer.
I am perfectly fine staying inside and tending to the fire, preparing popcorn, belly warming meals, and of course a never ending supply of hot chocolate.
I am a hot chocolate snob. If my kids are going to drink it all day then it needs to be homemade and low in sugar. This is the simplest recipe with only three ingredients. Dark cocoa powder, raw sugar, and milk.
Homemade Hot Cocoa (serves 3-4)
1/4 cup of cocoa powder ( I use dark cocoa from Wilber’s)
1/8 cup raw sugar
3 cups whole milk
Over medium heat wisk together dry ingredients in a saucepan.
Add just enough water or milk to make a liquid paste.
Add milk and stir until combined and heated.
Pour in cups and top with whipped cream.
You can make whipped cream by whipping heavy cream and some sugar on high for several minutes. Soft peaks will form and you know it is finished.
Double the batch and keep it on low all day because as you know kids are in and out all day long on snow days.
Now I have to go dig out my snow pants!
