There is a farm-to-table creamery down the road from our place that has the best homemade ice cream. If you are local, you know how yummy Fox Meadows ice cream is and what a treat it is to sit on their porch overlooking their dairy. They are always concocting something new, but I always go back to my favorite flavor, Honey Lavender.
I have been thinking of ways to use my lavender vitality essential oil in my baking and since Fox Meadows has the ice cream covered I thought cookies would be the next best thing.
Honey, Lavender, & Vanilla Bean Shortbread Cookies
2 1/2 cups flour
3/4 cup rapadura or succanant sugar
1/2 tsp sea salt
1 cup of cold butter
1 seeds scraped from one whole vanilla bean
4 heaping TBLS raw honey
2 tsp lavender buds
Cream all the ingredients together. Using a sheet of wax paper roll into a log. Tap each side to make square. Place log on a cookie sheet and freeze.
Dough will last a couple months in the freezer if wrapped well in a freezer bag.
I love that about this recipe. I can always have fresh cookies if I have unexpected guests.
