We all love Thanksgiving. It is the no pressure holiday. Just a day of feasting with family or friends. If you are in charge of preparing the salad this year. Here is a festive and seasonal salad that will last for several days if you keep the dressing on the side. Kale and cabbage have a good fridge life and will stay crunchy for several days if you keep it covered.
1/2 of a small head of purple cabbage, cut in strips
6-8 large stems of kale, roughly chopped
1/2 red onion, sliced thin
1/4 cup or more of feta cheese, crumbled
1/2 cup toasted pumpkin seeds
1/2 cup walnuts or pecans, toasted and lightly dusted with cinnamon
1/2 cup dried cranberries or raisens
2 large Granny Smith apples, roughly chopped
Layer in a bowl and mix the dressing
1/4 cup pure maple syrup
1/4 cup apple cider vinegar
1/2 cup grapeseed oil (or cooking oil of choice)
1 Tablespoon dijon mustard
Salt and pepper to taste
Add all ingredients in a mason jar and shake. You can also use an immersion blender to blend the ingredients too. This make a lot of dressing that can be used for other salads.
Drizzle to pre-dress the salad or keep it on the side.
