I am obsessed with any kind of crisp. Why? Because they are easy to put together and they look beautiful and taste amazing with homemade fresh whipped cream or icecream. Keep some pre-made crisp topping in your fridge for those spur of the moment guests or invites to picnics this summer. You can use any kind of summer berry or fruit. Mix flavor combos together like peach, blueberry, lemonzest or blackberry, peach, ginger. Our favorite is rhubarb strawberry.
Rustic Skillet Summer Fruit Crisp (Serves 6-8)
1 stick of butter
1 – 1 1/2 cups succanant or rapadura sugar
2 cups whole oats
3-4 TBLS cinnamon
6-8 cups fresh in season fruit
Coat your large cast iron skillet with butter or grapeseed oil. Lay your fruit in the skillet.
In your mixer combine butter, flour, oats, sugar, and cinnamon. Make a crumbly mixture and pile it on top of your fruit. The more the better.
Bake at 350 for 30 minutes or until golden brown.
Serve it up in old camp mugs right out of the skillet and top it with a healthy serving of whipped cream.
