Homemade Einkorn Pasta
Love is the magical ingredient in any delicious meal. If cooking is drudgery, that key component is missing. Love.
Slow intentional cooking is therapeutic. Granted not every meal can take copious amounts of time, but make it a goal to block out some time each week to just be present in your kitchen adding love to a meal.
Put on your apron, pour a glass of wine, and listen to that French Classical station on Pandora.
Pasta from scratch is a meal that allows you to do just that. Since we do not eat pasta on a regular basis this was a treat. Using Einkorn flour creates a smooth golden dough. Einkorn flour is lower in gluten and easier to digest.
How to:
Using a large bowl combine 2 ½ cups Jovial Einkorn and 1 tsp sea salt.
Create a well in your flour. Crack 4 farm fresh eggs into the center of the flour. Drizzle 1 TBLS of organic olive oil over the eggs.
Using a fork slowly whisk the eggs and in a circular motion slowly sweeping the flour in until you get to the edge of the bowl and the dough has taken shape.
Turn it out out onto a floured surface and knead into a smooth ball. You may need to add more flour as you knead.
Flatten and cut into quarters.
Use your pasta roller to flatten. Run it through several times. Each time changing the setting to create a thin dough.
Cut into the shape you desire and cook fresh or hang to dry.
Once dry. You can store it in the refrigerator for a week or freeze.
