Lemon Posset

These are the simplest summer treat. Perfect for hot days or special occasions. Capture the fresh flavor of lemon and summers best berries.

Hollow out lemons or simply use small ramakins for this dessert. Top with a generous amount of berries and whipped cream.

The Recipe

The juice of two lemons

1 cup of organic cane sugar

2 cups heavy whipping cream

Bring sugar and cream to a boil for 2 minutes, making sure to stir so it does not boil over.

Add in the lemon juice and boil for 2 more minutes while stirring.

Pour into small ramakins or tea cups.

Let cool in the refrigerator for 5 hours or more. The posset will set up and become like a thick custard or pudding.

Top with berries and whipped cream
